What device/software should I use to scan documents and convert to PDF format files?

I want to digitize some books so I can have access to them without the bulk. My plan is to saw off the binding, then put the pages into a full-duplex scanner to grab and image and form a PDF file.

What inexpensive devices and software might I use to accomplish this goal?

Why do many grocery stores not allow taking pictures inside?

I am an architect who likes architecture as a hobby. Grocery stores in the LA area have told me "no" when I have tried to take pictures of their decor, for a strictly personal collection.

Part of the problem is corporate spying. Competitors want photos of stores to compare their layouts and customer counts.

Another part is store security. You do not want to make it easy for theives to circumvent security cameras.
