I would recommend a weatherproof security camera system with infrared sensors. Wireless security cameras are most convenient as well. If you are on a tight budget, you could try dummy cameras. As long as they are clearly visible, they may scare some bad guys away.

I want to get a wireless camera system for my home. If any high tech thief wanted to sneak in could he apply a jamming signal and basically make the cameras useless for the time being?

yeah, it is theoretically possible, but it would take a lot of work. I wouldn't expect a thief would have the technical know-how to pull that off.
also, the ease with which they can jam it depends on the type of wireless connection. wifi should be pretty solid. analog transmissions are typically easier to jam. since wifi will have built-in error detecting and rebroadcasting of corrupted packets, it tends to be more robust.
